Ingredients to prepare for roasting.
- Green coffee beans (choose good and quality coffee beans).
- Pure butter (unsalted).
- Coffee roaster.
- Grain salt.
- 40 degree white wine.
- Container for coffee beans after roasting.
Coffee roasting steps.
- Heat the coffee roaster to about 180-200°C, depending on the type of machine. This temperature will help the coffee beans to cook evenly and develop the maximum aroma.
- Put the green coffee beans in the roaster and turn on the rotation mode to avoid burning or uneven roasting.
- When the coffee beans have started to brown and have a characteristic aroma, let the coffee cool down to 160, then add butter and salt in a ratio of 20:1 (20 butter and 1 salt) and continue roasting. The butter will melt and penetrate the coffee beans, creating a thin, smooth shell around the beans.
- Continue to rotate the machine evenly and roast the coffee and butter mixture for about 10-15 minutes until the coffee beans reach a dark brown color and emit an attractive aroma. Note that you should not burn or roast for too long.
- When the roasting process is complete, put the butter roasted coffee beans on the turntable, then use the machine to spray alcohol on the coffee and let it cool completely. Then, put the plastic bag in a vacuum. When you want to use it, grind it with a coffee grinder to get complete coffee powder.
